
It’s about time I post something sweet, don’t you think?
These cookies you see up there are freakin’ delicious indeed!
I am a total sweet tooth and having a food blog without anything sweet so far has really been bothering me!
So the other day, I decided to try out something new to post on the blog, a feather light chocolate orange cake.
This cake is by far the lightest I have ever made, no fats whatsoever, very little flour and sugar, pretty much all egg whites.
What can you except from a recipe like that? Bland, bland, bland!
So I had to add a little more cocoa, sugar and some vanilla essence to save the cake.
After all of that… Bland, bland, bland!
After this little experiment I have learned my lesson! Fats and yolks make the cake!

But enough about that… This post is dedicated to the freakin’ delicious cookies I was talking about.
I got this recipe from an old recipe journal my mom has, full of recipes shared by family and old friends.
They are chewy and covered with a sugary syrup, topped with crunchy coconut!
The strange about these cookies is the fact that the recipe calls for cheese, yes cheese.
Their not savory cookies, sweet and delicious, who would of thought that parmesan cheese would go so well into sweet things?

INGREDIENTS:
Cookies
4 cups flour
1 cup sugar
11 tbsp hard cheese (parmesan, pecorino, gruyere, etc.)
2 tbsp margarine/butter
2 tbsp baking powder
3 eggs
Pinch of salt
Some milk if needed
Topping
2 cups sugar
2 cups water
1 cup desiccated coconut
DIRECTIONS:
Cookies
Pre heat the oven to 180ºC/350ºF
Mix all of the ingredients together until you have a firm enough dough to cut out with a cookie cutter. If the dough seems too dry, add some milk until its soft enough. Bake the cookies for 10-20 minutes (depending on the thickness of your cookies).
Topping
Heat sugar and water together in a saucepan, until sugar dissolves. Stirring, bring to a boil and let boil for 4 minutes. Remove from heat and dip the baked cookies into the syrup.
Now just cover the sticky cookies with desiccated coconut and your all done!
If you want a crispier and stronger coconut flavor and texture, toast the coconut over medium heat in a skillet.
